Meatless Stuffed Green Peppers
 
   

Ingredients
Instructions

4 medium sized cleaned green peppers, (keep the tops)
1 package of Boca Crumbles
1 cup of cooked brown rice
1 can of diced tomatoes
1 teaspoon each of garlic powder, onion powder and celery salt


Caregiver Kitchen - Stuffed Green Peppers

In a medium mixing bowl combine all ingredients except the canned tomatoes. Mix well, stuff mixture in the cleaned peppers. Put tops on peppers and secure with toothpicks. Place in a 2 quart baking dish that has been sprayed with cooking spray. Pour canned diced tomatoes with their juice over the stuffed peppers. Bake in oven at 350 degrees, covered for 45 minutes, Then uncover and bake another 15 minutes.

   1 hour 15 minutes

Diet condition:  Vegan, Low fat, Low salt, no cholesterol

Easy Lentil CrockPot Stew
(Can also serve as lunch)
Ingredients
Instructions

1 cup of Lentils, washed and sorted
1 -16 oz frozen package of mixed vegetables, or your favorite
1 frozen 10 oz box of chopped spinach
1 can of diced tomatoes with juice. 1 chopped onion. Minced garlic to taste 2 Celery ribs chopped
Approx 2 cups of vegetable broth. Enough water to fill to the top
1 teaspoon of dries basil and oregano.


Add all ingredients to crock pot. Set on low for 8 hrs or high for 4 hrs. Enjoy your day.

Sonya's "Forget It!" Chicken
Ingredients
Instructions

2 skinless chicken breast
1 can French Onion Soup
1 can Cream of Mushroom
1 tbspn Seasoned salt/Seasalt (i fyou have hypertension)
2  white potatoes
1 tbspn Onion Powder
Foil and Non-stick spray

 


Spray baking pan with Nonstick spray.
After washing chicken, place meat side down in baking pan. 
In a bowl mix soups and seasonings together. Pour over chicken.
Cover with foil
Bake 375-400 degrees for 1 hr.
If chicken is tender, add potatoes and let bake until potatoes are tender.

   90 minutes
Number of servings: 4 Adults
Diet condition:  Hypertension, Soft Foods
